Neither is there a whole lesson in University that you somehow missed that teaches about reading knitting patterns.

So why can it be so hard?

Taking a single pattern and deciding to knit it can work out fine, but there are patterns out there that are almost unreadable, even for confident advanced knitters. And that's down to the writer, not the knitter!
